The grapes come from a single vineyard source in the Paicines area just east of the Monterey Bay. The cooling influence of the ocean helps to create dark complex red wines with balance and finesse. These grapes were harvested at just under 24 percent sugar which produced a lower alcohol, food-friendly wine. The wine was fermented cool in stainless-steel tanks then transferred to small oak barrels for aging almost all of which were neutral. This wine will age well for four to six years.

This 2009 Revel Central Coast Cabernet Sauvignon has aromas of leather, black fruit and plum with hints of tobacco and minerals. This wine has ripe flavors that match the aromas perfectly. The mouthfeel is smooth with medium to heavy weight on the palate. The finish is long and fruit driven with a pleasant amount of food-friendly acidity. Enjoy this wine with pork tenderloin, roasted peppers, creamy mushroom soup or medium cheeses such as havarti.
